Witch Fingers

These WITCH FINGERS are really easy to make and they definitely don't need to be perfect; the imperfections make them extra CREEPY .  A great bake to make with kids because of this.  You can use store bought Sugar Cookie dough and tint it with green food coloring or follow my Sugar Cookie Recipe .  A dough without rising agent is best to keep the definition in the knuckles and prevent the cookies from puffing up in the oven.  Once you have prepared your dough, roll out to about 1/4" thickness and cut into finger sized rectangles.  Then shape using your hands.  Make it pointy at the top of the finger and a little fatter where you want your knuckle. Using the tip of a spoon or small spatula, make three indents for the knuckles.  Some sliced almonds added before baking and a touch of seedless mixed berry jam after the cookies have cooled complete the SPOOKY snacks.  HAPPY HAUNTING! 🦇

Candy Corn Coated Kettle Corn

I get a lot of baking ideas when I am about to fall asleep.  The idea for this popped into my head before bed last night and I had to give it a shot.   I am really pleased with how well it works.  Sometimes I surprise myself!  This is a great way to use up some of the imperfect, smooshed candy corn (especially if you have a touch of OCD like I do and can't stand seeing broken pieces).

Ingredients

  • 1 TBS (18g) Coconut Oil

  • 1/2C (80g)Classic Candy Corn, Chopped

  • Extra, whole Candy Corn (optional)

  • 3 TBS (52g) Popcorn Kernels

Preparation

  1. Measure out all ingredients.

  2.  Chop Candy Corn.

  3. Line a baking sheet with parchment paper or a silicone baking mat, set aside.

  4. Over medium/high heat, heat Coconut Oil and just a few Popcorn Kernels in a medium size saucepan covered with a lid.  **By heating a few kernels with the oil, you will know when the oil is hot enough to add the remaining ingredients. **  

  5. Once one of the kernels pops you can add the remaining Popcorn Kernels and the chopped Candy Corn. 

  6. Be sure to keep the cover on and continuously shake/swirl to prevent burning.

  7. The Candy Corn will melt and once hot enough the Popcorn will pop.  Continue to shake to be sure all the kernels are popped and coated.  **you may have a few kernels unpopped, that’s OK, just be sure not to burn the mix.**

  8. Pour Popcorn out onto your  prepared baking sheet and spread out with a spatula or spoon.

  9. Allow to cool.

  10. Gently Break up any large clumps, pour into a bowl and add the reserved whole Candy Corn and serve to your favorite Ghosts and Goblins.
