In addition to the traditional Christmas cookies my family bakes each year, I always like to experiment with new flavors and recipes. We have never had an orange flavor in the mix and oranges are a Winter fruit that remind me of Victorian Christmas celebrations. Think Little Women! As a kid I took a field trip to an old Victorian house and made an orange ornament studded with whole cloves. I will never forget the zippy, spicy smell! I happened to find some sweetened, dried orange slices on one of my Trader Joe's excursions. They were too bitter for my kids on their own, so as to not let them go to waste they are now the star of my Orange-Almond Spice Biscotti! Enjoy!
Recipe:
Cookie:
2 1/2 C All Purpose Flour
1C Granulated Sugar
1 tsp. Baking Powder
1/2 tsp. Baking Soda
1 1/2 tsp. Cinnamon
3/4 tsp. Nutmeg
1/2 tsp. Ground Cloves
2 Eggs
2 Egg Whites
1 tsp. Pure Vanilla Extract
Seeds from 1/2 Vanilla Bean
100 g Sweetened, dried Orange diced (extra for garnish)
1 1/2C Sliced Almonds
1 Tbs Orange Juice
Glaze:
1C Confectioners Sugar
4 Tbs Triple Sec (or other orange liquor)
- Pre-heat the oven to 325 degrees
- Combine all dry ingredients
- Whisk together eggs, egg white, vanilla, vanilla bean seeds and orange juice
- Add wet mixture to dry ingredients and mix until moist
- Add diced orange and Almond slices
- Turn the dough out onto a floured surface and divide in half. Form each half into a log about 12 inches long and 3 inches wide (depends on how long/fat you want your biscotti)
- transfer to a baking sheet and bake for 30 minutes
- Remove from oven and lower oven temperature to 300 degrees
- Cut the loaves into 1/2 in slices stand slices up on baking sheet and return to oven for an additional 20 minutes.
- Remove cookies form oven and transfer to wire rack to cool completely
- Prepare the glaze by mixing confectioners sugar and Triple Sec
- Drizzle cooled cookies with glaze and sprinkle with reserved diced orange
- ENJOY!
