Witch Fingers

These WITCH FINGERS are really easy to make and they definitely don't need to be perfect; the imperfections make them extra CREEPY .  A great bake to make with kids because of this.  You can use store bought Sugar Cookie dough and tint it with green food coloring or follow my Sugar Cookie Recipe .  A dough without rising agent is best to keep the definition in the knuckles and prevent the cookies from puffing up in the oven.  Once you have prepared your dough, roll out to about 1/4" thickness and cut into finger sized rectangles.  Then shape using your hands.  Make it pointy at the top of the finger and a little fatter where you want your knuckle. Using the tip of a spoon or small spatula, make three indents for the knuckles.  Some sliced almonds added before baking and a touch of seedless mixed berry jam after the cookies have cooled complete the SPOOKY snacks.  HAPPY HAUNTING! 🦇  

Strawberry-Raspberry Crisp Rice Treats



I found some strawberry flavored marshmallows at the store the other day.  I am a sucker for fruit flavored marshmallows or any new flavor of marshmallow for that matter.  It reminds me of weekends spent with family upstate New York camping and roasting marshmallows.  My mom and aunt would always buy the wackiest flavors and shapes of marshmallows they could find.  Now I am one of the crazy marshmallow ladies!  It's almost like a contest to see who can find something no one has tried before or a really wild flavor.  Some of the more recent flavors I have tried are brownie, chocolate-mint, and watermelon.

Besides roasting them on a campfire the next best thing to do with marshmallows is make rice crispy treats of course! 

Strawberry-Raspberry Crisp Rice Treats:

3 Tbs Unsalted Butter (plus extra to grease the pan and your hands)
5C Crisp Rice Cereal
1 (8oz) pkg. Strawberry Flavored Marshmallows
1 (34g) pkg. Freeze Dried Raspberries (crushed)

1. Melt Butter in  a large pot over medium high heat
2. Add Marshmallows and stir until melted (no lumps), being careful not to burn
3. Turn off the heat and add Cereal and crushed Freeze Dried Raspberries
4. Stir gently until combined
5. Transfer to a greased pan (I used 13" x 9") using spatula
6. Grease your hands with butter and push gently into the pan to smooth it out and fill into corners. Don't push too hard you don't want to crush the cereal. 
7. Make chocolate topping (optional)

For Topping:
1/4C Semi Sweet Chocolate Chips
1 tsp. Coconut Oil

1. Place chocolate chips into microwave safe dish
2.  Microwave at half power in 30 second intervals stirring after each, until smooth (no lumps)
3. Stir in coconut oil
4. Transfer to a sandwich bag or piping bag with small tip
5. Snip the tip of the bag if using a sandwich bag and pipe over the top of the treats
